Ingredients
Directions:
1.Preheat the oven to 425 Fahrenheit.
2.Roughly chop broccoli, removing the tough part of the stem and discarding.
3.Dice potatoes into small cubes. Place in a large microwave safe bowl and microwave for 5-6 minutes, or until they are slightly tender.
a.Note: you don’t want them to be cooked fully, or you will end up with a mashed potato tot!
4.In a blender or food processor, add broccoli and potatoes and pulse to combine and chop the broccoli and potatoes into pea-sized pieces. Set aside to cool until it is warm but not too hot to handle by hand.
5.In a large mixing bowl, whisk together egg, shredded cheese, onion powder, salt, and pepper until combined. Add broccoli and potato mixture and stir to combine and form a cohesive mixture.
6.Lightly coat your hands in olive oil and form the mixture into small tots. Place in a single layer on a baking sheet lined with parchment paper. Repeat with the remaining mixture, oiling your hands as needed between tots, until all tots are formed.
7.Lightly brush the tots with any remaining olive oil and bake for 20-25 minutes, or until golden.
8.Remove from the oven and enjoy!
